Order Up : Midnight taquitos served with some red bell pepper salsa, topped with chives, queso fresco and a tall iced lemonade
Sometimes it just takes a song from Vicente Fernandez to send me into cooking mode. So I walked over to the fridge and what do I find??? Oh a nice little tub of left over taco meat. Well it’s time to get the pans hot and the tortilla sizzling.
Just grab a stack of tortillas, lightly fry in medium heat canola oil. Place about two table spoons of taco meat on the tortilla and roll them tight and then line them up in a tin sheet. I think I got about 20 of them on one tray. Crank up your oven to 350 degrees and wait about 45 minutes till they are crisp brown.
Next is the red bell pepper sauce. Through some onions, red bell peppers tomato paste, water and some pato sauce on low heat. Use your favorite seasoning to taste and your good to rock and roll. Now just plate and sprinkle some queso fresco and chopped chives.
After the meal is finished and your appetite is satisfied, it’s time to say a short prayer to thank God. Thank you God for reuniting us with old friends and memories that help us grow in our daily life. Give us the strength to maintain our faith in troubling times, and to lean on your words of guidance when we are looking for answers.
