One of my favorite Spanish food cart meals. The last time I ate these I was at a birthday party and the host had a personal chef to cook these up, and as many as you wanted. However, they added some bacon and sauerkraut which was a good addition but not my favorite toppings with cooked sausage. I feel like bacon has such an over powering flavor that you lose the textures and richness of the other ingredients.
But I decided to make my own version with cooked sausage, kimchi (OMG I love kimchi!!! Plus its super healthy for you and your digestive track), guacamole mixed with some homemade New Mexican “Mild” Green Salsa(The reason I mix the salsa into my guacamole is so that the juice doesn’t get all over your hands when your eating the mixtas. It just kind of bonds to the avocados and tastes amazing), freshly sliced tomato, and a small bunch of cilantro.
You know..the cilantro really made this dish because of the earthiness of the herbs flavor. I mean this dish was so tasty that I ate just one extra taco, shh…don’t tell any one.
After the meal is finished and your appetite is satisfied it’s time to say a short prayer to thank God. Thank you God for letting me share this meal with my loved ones and family. Help the families around the world that are suffering the loss of a loved one find piece in there heart, and may our President protect our country with the right decisions to keep our countries freedom and maintain balance in our world affairs.
