I was at Rite Aid the other day talking to Nina telling her about how I wanted to make some homemade pasta. She asked me if I had a pasta machine. I told her I have these two hands and I was going to roll out the pasta myself without a machine…when a gentleman behind me said. Homemade pasta, just the way mama use to make it. I realized then that the love people have for cooking takes there memories to there mothers and family that feed them meals that they will never forget.

So I took my time mixing the dough 1/2 flour and 1/2 semolina + 4 eggs. Which adds a nice creamy texture to the dough. I let is sit for 45 minutes and then dusted the counter rolling out the dough in four separate segments. Truthfully I thought I rolled it out thin enough but once I cooked it it puffed up a little bit bigger than I had anticipated. After boiling the pasta I cooled it under some cold water as I finished making the sauce, sauté mushrooms and tomato sauce.

After the meal is finished and your appetite is satisfied, it’s time to say a short prayer to thank God. Thank you God for the opportunity to dream big. Let my actions honor your heavenly commandments, and let my life give inspiration to the members of my family and friends.
